Shortbread cookies
Ingredients
- 1 1/4 cup butter, softened (2.5 sticks)
- 1 egg yolk
- 1 tsp vanilla extract
- 1 cup brown sugar
- 2 1/4 to 2 1/2 cup flour
Steps
- Mix the ingredients together.
- Bake at 325°F for 10-13 minutes. Lean toward the higher end or make the cookies smaller - going too short leaves them undercooked.
- When you take them out, they won’t be fully cooked. The edges should have browned but they’ll finish cooking as they dry.
Tips
- Use the upper end of the flour range (2.5 cups / ~315g). Going light on flour causes flat, underbaked cookies.
