Tomato soup
Ingredients
- 2 tbsp butter
- 1 onion, diced
- 1-2 cloves of garlic, diced
- 28 oz can of crushed tomatoes (the “big” can)
- 1 c chicken stock
- 1-2 tsp sugar
- basil to taste
- 1/4 c heavy cream or similar
- salt and pepper to taste
Steps
- Saute onion in butter for 10 minutes until translucent
- Saute garlic 1 min
- Add crushed tomatoes, chicken stock, sugar, and basil
- Simmer for 5-30 min
- Blend
- Add heavy cream
- Season to taste
Tips
- For a spicier version, add various chili flakes with the butter and onion towards the end
- The brand of crushed tomatoes has a big impact
