Dinner rolls (crusty European style)
From King Arthur Flour crusty European-style rolls.
- These came out very tasty with good flavor - more like rustic bread than a soft roll.
- Used sourdough starter instead of the preferment. Surprisingly not very sour.
- Water wash was okay; egg wash or milk wash would probably be better.
- Would add 5% wheat or spelt flour for a little more complexity.
